Aujourd&#8217;hui, l&#8217;Emmentaler est produit dans quelque 111 cr\u00e9meries de village \u00e0 partir de lait frais, non trait\u00e9, provenant de vaches qui se nourrissent d&#8217;herbe et de foin et ne sont jamais nourries avec des aliments ensil\u00e9s. Environ 12 litres de lait sont n\u00e9cessaires pour fabriquer un kilogramme de fromage.
